SAGE machines deliver great extraction, but the ability to reduce channeling is limited with standard tampers. That is why we have developed a BigStep especially for the basket carrier diameter that is usual at SAGE.

Please note that our regular 58.55mm diameter BigStep can be used for the 58xx versions of SAGE. This variant here is only suitable for machines with a diameter of 54 mm.

Tamper BigStep for SAGE machines I 53.40mm

The Pullman SAGE BigStep base was developed to minimize channeling at the edges, even with the smaller SAGE diameters. Like the big 58.55mm Big-Step, its smaller SAGE brother significantly reduces channeling when using the standard Breville filter. The 53.40mm SAGE Big-Stop uses the same patented technology like the big one to prevent the creation of a vacuum when camping. Here is our video comparison.

If you have no experience with dosing the coffee, using the BigStep will help you. Coffee needs room to expand with the addition of water. A guide to the right amount of coffee in the basket: if the top edge of the tampered BigStep is below the top edge of the basket, take a little more coffee, if the top edge of the tamper is above the top edge of the basket, take a little less. Of course, this is only a rough guide that can and should be adjusted depending on the coffee, personal preferences and experience.

Pullman Barista Grip - Powder Coated - Bright Red

Powder coatings are paints that are applied to metal and other conductive surfaces. They produce less waste than liquid coatings and are free of organic solvents. The material to be coated - here the aluminum handle - is negatively charged by electrical voltage. The positively charged powder adheres to the resulting electrical field and is baked in the oven.

The handles are easy to clean, available in every imaginable color and wonderful to customize. A little more sensitive to impact and scratch damage than anodized handles.

The handles are available with (BLACK TOP) or without (SOLID) black knock insert. The knock insert is made of durable acetal and is not only functional, it also looks good.
A 'must have' for baristas who 'knock' the basket carrier for the initial distribution of the ground coffee.

Color ALU: the 5mm spacer is built in, the variants in 2mm and 8mm are included for possible subsequent adjustment.

- dein Tamper ist ein wichtiges Werkzeug für die perfekte Extraktion, das gerne pfleglich behandelt wird :-)

- es empfiehlt sich, den Tamper immer auf einem Tuch, besser noch einer Tampermatte aus Gummi abzustellen, um Kratzer und Beschädigungen auf der Tamperunterseite zu vermeiden

- die Kante des Tampers ist messerscharf. Sie ist ein wichtiges Element für die optimale Funktionalität des Tampers. Stöße auf harte Oberflächen oder Stürze auf harten Fussboden zerstören die scharfe Kante

- Reinigung nur mit einem weichen, feuchten Tuch. Keine scharfen oder schleifenden Haushalts- oder Gastroreiniger verwenden. Nicht in der Spülmaschine reinigen

- Holzgriffe sind mit einem dänischen Öl behandelt und absorbieren bei normaler Nutzung Hautöle und Schweiß

- bei intensiver Nutzung kann mit dänischem Öl nachbehandelt werden. Überschüssiges Öl immer sofort abwischen, um eine gleichmäßige Verteilung zu gewährleisten

- Kleine Kratzer auf der Unterseite der Base beeinträchtigen die Funktionalität Deines Tampers nicht, können aber auf eigenes Risiko mittels feinem Sandpapier auf dem Schleifteller einer Bohrmaschine oder eines Akkuschraubers herauspoliert werden

The most important parameters of correct tamping are horizontal accuracy and consistency, or to put it another way: the tamping must be straight and even. There are recommendations circulating in various publications that you should tampe with 12kg (or more or less) contact pressure. Such a value is wrong - or at least misleading: it is much more important than maintaining a certain absolute pressure that you tamp consistently, i.e. always the same way. Whether that happens at 4, 6 or 8 kg is irrelevant. The tamping should only remove the air pockets that are still present after the distribution (chiselling). Incidentally, coffee cannot be compressed infinitely anyway. When the air pockets (air pockets) are gone, the coffee no longer condenses, even with the maximum contact pressure. There is also a nice video by Adam about this. The horizontal accuracy is already 'preset' by the previous chiselling, so to speak, and the BigStep's accuracy of fit largely prevents you from tamping crookedly. However, it is helpful to hold the tamper in such a way that you touch the upper edge of the portafilter with your thumb and forefinger as a reference point when tamping. Then you can basically no longer tamping wrong.

A clear 'YES' with two small caveats:

the Colours, which we use for tampers, chisels, portafilters, spacers etc. are identical.

However, it has turned out that the differences are marginal and almost never bothersome, especially since woods tend to adjust in terms of color over time anyway.

Of the BigStep LITTLE is a further development of the BigStep; and in two ways:

1: the A little is significantly easier. Contrary to the widespread opinion that a high-quality tamper should have a certain weight, a low weight is always an advantage. You simply have more control when tamping. This is particularly interesting for those who tampe many hundreds to thousands of shots a day, as the lower weight causes less fatigue. But it's also definitely a plus for private users or 'normal' baristas with a few dozen shots a day.

2: the second advantage is the narrower sidewall. This is particularly relevant if you like to fill your sieve very full - then you have more control when tamping with the narrower sidewall because the tamper edge does not protrude so far over the edge of the sieve.

In terms of further functionality, both are exactly the same. The main feature of the BigStep, the maximum coverage of the screen cross-section, is identical for both.

Of the BigStep MK III offers the same dimensions as the normal BigStep, but comes with a gold Titanium Nitride coating. Surface finishing with TitanNitrid is common in areas where the highest level of precision and robustness is required, e.g. in medical technology. This makes the tamper even more resistant - and it also looks good.

The BigStep is actually a small revolution - it's not the only one for nothing patented Tampers on the market. The step achieves an unprecedented increase in surface area without the formation of a vacuum. This reduces the channeling significantly.
